There’s no Internet at this hotel ( that I’m willing to pay for ) but here’s a shot from my cousin Rajeev’s wedding :)
Most days I still feel like that girl with her whole life in front of her, no idea when she’s going to tell her parents about her boyfriend, eating ramen and hoping her career will be worth the excessive amount of work she’s doing now. Never knowing the future, but hoping, and trying to be practical.
I looked at my facebook profile today and felt this surreal sense of ageing.
There it is.
My life in a nutshell.
I’m finally public about my relationship. I’m finally an established software engineer, after paying my dues at GT.
Unreal.
Yet so very real.
Between my life, my career move, ,my business, Jeremy’s new job, combining homes, getting married, I’ve found I’m someplace pretty magical.
I gripe sometimes but it’s very much like griping about getting magic faerie dust in your eyes when you’re missing the point that holy crap faeries are real!
I could probably die now & it be just fine.
When I am on a diet sometimes I like to get creative to satisfy my taste buds while helping me stick to said diet. Here’s a recipe for a simple, easy meal that’s pretty much guilt free. I made it up. It was tasty.
Spicy Napa Chicken with Pea Sprouts
Ingredients
- 1 Box of Pea Sprouts – I found this at H-Mart and it’s sold at most international grocery stores
- 4 Sweet Red Peppers
- 2-4 Napa Cabbage Leaves
- Rooster Sauce to your preference
- 1 Boneless, Skinless Chicken Thigh ( Breast can be substituted)
- A pinch each of ground black pepper, ground red pepper, ground sea salt, garlic powder, onion powder and paprika.
Preparation
This is really easy. My mother tells me I don’t cook, I assemble. She’s right mostly. I’m not a big fan of slaving over a stove. This recipe is delicious and required only my george foreman grill.
Rub the chicken thigh with all the spices combined. Toss that sucker on to the Foreman and let it grill up. In the meantime, wash your pea shoots, and cut up your red peppers. Put them in a bowl together.
Rip off two to four leaves from your Napa cabbage & wash them. Your chicken should be pretty much done almost. Mine took like 6 minutes. Cut or dice the chicken into small pieces. Throw it together with the pea shoot mix. Now put a sizeable amount of that mix onto each cabbage leaf and then spray like cray with the rooster sauce.
Oh my god it is delicious. The pea sprouts lend this surprisingly good slightly nutty taste to the whole thing.
And healthy. :)

Every now and again, Boot Camp has a competition or challenge that lasts about a month. This time though, there’s a prize for the winner. The person who loses the most weight, inches and overall % decrease wins stuff. If you win two categories you get to go to Chateau Elan. No sweets, strange rules, meal replacements, and tons of working out.
I still remember one of my cousins back in May visiting and not having seen me for a year exclaim “Where is the rest of you?!”. Hells yeah. Now that’s a nice feeling.
I’m going to get that question asked of me again. I want people to look at me and think, dang, she worked hard. And I want to deserve that thought. Thankfully, If there’s anything I loooove it’s competition. I’m going to kill this.

They say changes come in threes.
And deaths too.
There is just so much change happening in my life right now I am gripping at the edges of anything in my periphery. There is a minor worry that I’ll hold onto my sanity only until I plunge into madness like I’m on a toboggan made of my emotions and thoughts.
Don’t worry, I am self medicating with chocolate, exercise and long islands.
I love Popsicolor! It’s the latest tool in my little iPhone artbox. I think it provides beautiful results given the right input file. It is a bit picky! I find that it’s easier on the program, and lends you more control if you make the photo black and white and control the levels before you hand it over to Popsicolor.
